What do I do when I install my dual monitor and a pop-up appears to “Screen Recording”?

No worries — this is completely normal during the initial setup on macOS.

This pop-up simply asks for permission to allow your operating system to mirror or extend your screen to the portable monitor. By approving this request and following the steps, you're enabling the driver to function correctly.
